What I eat in a day with Gestational Diabetes

Helllllloooooooo all! So at 28 weeks, they tested me for Gestational Diabetes. I failed the one hour glucose test and came back the next week for the three hour test and failed that one as well. They then diagnosed me with Gestational Diabetes and said I had to prick my finger and check my sugar four times a day. I am currently in my 34th week of pregnancy and have since been put on bed-time insulin. I have basically learned everything on my own and through Facebook groups.

So basically, you just have to avoid sugar as much as possible. They tell you to avoid carbs because it'll spike your sugar levels, but you actually have to eat a certain amount of carbs or it'll spike your sugar levels as well (it's all about balance). You just have to make sure you get enough protein to outweigh the carbs. The basic formula when looking at a food is to take the amount of carbs and subtract the amount of protein and you're left with the real number of carbs. CARBS (g) - PROTEIN (g) = CARBS THAT ARE COUNTED (g)
So I check my sugar when I first wake up and then two hours after each meal (breakfast, lunch, & dinner). I also eat two or three snacks in between and have to eat a bedtime snack or the fasting numbers will be off.
For breakfast, lunch, and dinner, shoot for 30-45 grams of carbs for each meal. For the in between snacks, aim for 15-30 grams of carbs.

Anywayyyy, here's an example of what I eat in a day. :-)
BREAKFAST
- 2 eggs, scrambled
- 1 piece of toast (whole-grain or KETO bread)
- 1 cup milk
- small cup of coffee or tea (no sugar added)

SNACK
- 1/2 apple
- 1 cheese stick
LUNCH
- burrito with shredded chicken, cheese, in a carb-balance tortilla
- 1 cup baby carrots with hummus
SNACK
- greek yogurt
- 1 cheese stick
DINNER
- 4 oz skinless chicken breast
- 1 medium baked potato
- 1 cup brussel sprouts
BEDTIME SNACK
- slice of toast (whole-wheat or KETO bread) with cheese
- 1/2 cup popcorn
